ALBANIA: Kabuni (with love and thanks to Sindi Kaskaviqi)

Ingredients:
500g rice
1L lamb meat broth (water works too)
200g sugar
150g raisins
100g butter
1tbs olive oil
Some cinnamon
Some clove
A little bit of salt
Add the butter and olive oil in a pot. After the butter has melted add the rice. Mix and stir for about 5 minutes, then add the broth/water which must be hot. Now add the clove and the salt.
While Kabuni is boiling, make some caramel to add to it. In a hot pan mix 2tbs of sugar with olive oil until it reaches a dark brown color. When finished, add it to the boiling Kabuni.
The Kabuni should boil with low heat and the pot should be covered. When you notice that the water has exhausted, turn off the stove and let it sit for 10 minutes for the rice to get soft.
Then put the boiled Kabuni in a tray and add the raisins. Let it sit for another 10 minutes before you add the rest of the sugar. Mix well and then add some cinnamon on top. Now it’s ready to serve!
