BULGARIA: Mekitsa

There’s a version of these heavenly pillows in other parts of the world — sopapillas, beaver tails, bannock, doughnuts, elephant ears — all variations on the same theme. Deep fried dough. Num, num, num
INGREDIENTS:
1+1/2cups all purpose flour
1 Egg
1/2tsp Baking soda
1/2cup Yogurt
1/4tsp Salt
Oil for Deep frying
DIRECTIONS:
Take the flour in a large bowl, add the egg, baking soda, yogurt and water (as per need).
Knead everything as a soft and smooth dough. Cover and keep aside for an hour.
Make medium sized balls from the dough. Now oil your hands generously.
With oiled fingers, shape the dough balls as round shaped discs.
Heat oil for deep frying, fry the shaped discs in medium flame until they turns golden brown.
Serve hot with your favourite toppings.
