DEMOCRATIC REPUBLIC OF CONGO (DRC): Fruit Fritters

My research says that desserts don’t really happen in DRC and when they do, it’s Puff Puff — a dessert popular in many West African countries. Annoyingly, I’ve made Puff Puffs and wanting to find something new, found this recipe, supposedly from DRC. I hope it’s authentic and apologize if it’s not.
INGREDIENTS:
2 two cups all-purpose flour, sifted
1 tsp baking powder
salt and pepper
Sugar to taste
2 eggs, beaten
2 cup milk or water
2 tbsp cooking oil
2 cups of corn (maize), bananas, peeled and sliced and/or pineapple, sliced or cut into chunks
oil for deep frying
DIRECTIONS:
Prepare batter by mixing all ingredients in a bowl. Add a bit more liquid if necessary. Batter should be thick enough to cling to a spoon without dripping.
Pour oil into deep skillet or pot, to a depth of one to two inches. Heat oil to 375 °F (190 °C).
Stir the fruit into the batter. Carefully spoon the batter into the oil. Fry until golden brown, turning a few times. For the pineapple slices:
Dip the ingredient into the batter. Carefully transfer to the oil. Fry until golden brown, turning a few times.
