FIJI: Custard Pie

This one’s for you Nile. Thanks for the suggestion. I really think this is one of my favourite puddings in the world.
INGREDIENTS:
2 cups flour
2 tsp baking powder
Pinch salt
125g cold butter
1 egg
4 tbsp cold milk for base
2 tbsp caster sugar for base
3 tbsp brown sugar for custard
3 cups milk for custard
½ cup custard powder
DIRECTIONS:
For base, sift flour, baking powder and salt
Beat caster sugar and butter till combined. Add egg and 4 tbsp milk and mix
Slowly add flour mixture and mix slowly till it comes together into a firm dough
Rest in fridge for 30mins to an hour
Pre-heat oven to 180 degrees for 15 minutes, and bake base for 25 minutes
Cool completely before topping with custard
For custard, heat 2 and ½ cups milk and sugar and bring to slow boil
Dissolve custard powder in half cup cold milk and add to milk
Whisk constantly for a few minutes till custard is done, approx. 3-4 minutes
Cool custard for about 5-10 minutes and then add to base
Refrigerate for about 2 hours before cutting into squares
This pie is best served cold
