IRELAND: (Hazel’s Mammy’s) Bailey’s Cheesecake

So quick, so easy and no cooking. My kind of pud. Thanks to Hazel Lally’s mam for this beauty…just what the doctor ordered.

INGREDIENTS:
4 oz unsalted butter
9oz crushed biscuits
1 lb cream cheese
2oz chocolate
200ml double cream
3.5oz of icing sugar
2 shots Bailey’s Irish Cream
DIRECTIONS:
Melt the butter and mix it with the crushed biscuits. Press into a lined 9” tin to form a base.
Whip cream until peaks form. Separately, beat the cream cheese a little and incorporate the sugar and Bailey’s as your palate sees fit.
Fold in the whipped cream and most of the chocolate flakes (chocolate can be dairy or dark whatever you prefer).
Leave it to set in the fridge for as long as you can tolerate, but at least 3 hours.
Decorate with remaining chocolate flakes (or melt them into a cheeky ganache)
