What a whacky recipe. Make fresh pasta and then deep fry?! I tried to make pyramids, but I think I made the “chips” a bit too large. Still I feel I’ve captured the spirit of this Tartar treat. You’ll love, I think.

INGREDIENTS:

wheat flour – 0,75 kg;
sugar-3 tablespoons;
Eggs – 5 pcs .;
Butter – 45 g;
milk – 3/4 cup;
Salt – at the tip of the knife;
Caramel for impregnation
honey – 450 g;
sugar / sand – 1 glass;
refined deodorized vegetable oil for frying – 400 g.

DIRECTIONS:

In the beginning it is necessary to separate the proteins from the yolks,then carefully grind the egg yolks, sugar and salt. Whip the egg whites, pour them into the mixture, add milk and flour, mix the dough. To make the dough easier to knead, you can pour a little vodka (alcohol smell during cooking will disappear). If the dough sticks to the cutting board while stirring, add flour. But the flour should be in moderation, otherwise the pastry will turn out to be rude, it will not be airy.

We put the dough into a cellophane bag, place itin the cold, – it should be a little (20 – 30 minutes) to lie down. We roll out the sausage from the dough and cut it like noodles. A variant is possible, when balls are rolled from the test.

In a deep thick-walled pan (pan orkazan) we heat oil and fry noodles or balls in batches in boiling fat. The product should be pleasantly golden in color. We put the fried noodles in a colander, in order to remove excess oil. In parallel, we prepare caramel. To do this, carefully mix honey and sugar, then bring the mixture to a boil, stirring so that it does not burn. When bubbles appear, the fire must be turned off, otherwise the thin honey smell inherent in the chak-chak will be lost.

Fried noodles are mixed with a honey-sugar mixture, and hands, moistened with cold water, create the desired shape. Usually “Chuck Chuck” is laid out on the dish with a slide or a pyramid.

This is the basic recipe of the Tatar cake chak-chak. It can serve as the basis for various options: you can add poppy, grated walnuts, almonds or any other nuts. You can also decorate the cake in different ways: put marmalade or marzipan figurines, small candies, pour melted chocolate.
