Kue Lapis Surabaya

Thanks Bob Salem for this recipe. Finished preps for our new chickens today and couldn’t help but think that having a few layers around would be useful when undertaking this egg-stravaganza.

INGREDIENTS:

20 egg yolks
200 g sugar
5 egg whites
100 g flour
250 g butter
1 tsp vanilla extract
1 tbs cocoa powder
8 TVs strawberry jam

DIRECTIONS:

Preheat oven to 180 C or 350 F.

Beat butter for 10 minutes on high speed until pale and fluffy. Set aside.

Beat egg yolks and sugar in another bowl for 10 minutes on high speed.

Lower your mixer speed and stir in flour. Add vanilla extract and add the butter.

Beat egg whites until stiff and stirring into batter. Divide batter into three portions.

In a small bowl, mix cocoa powder and a tablespoon of water until well combined. Stir in cocoa powder mixture with one of the portions.

Transfer each mixture into a loaf (7.9″ x 4.3″) lined with parchment paper, and bake in the oven for about 20 minutes.

Spread with some Strawberry Jam (2 tablespoon) and serve!
